What is Zongzi
Zongzi, a food made from steamed glutinous rice wrapped in zongzi leaves, is one of the traditional festive foods of the Han Chinese. As one of the traditional foods with the deepest cultural history in China, zongzi has spread far and wide. For thousands of years, the custom of eating zongzi has been prevalent in China and has spread to Korea, Japan and Southeast Asian countries.
Zongzi recipe
You’ll need:
70 pieces Rice dumpling leaves
800g Fine front tip or plum meat
2000g Glutinous rice (long or round)
Seasoning for marinated meat:
10 tablespoons of soy sauce
5 tbsp Old soy sauce
6 tablespoons of oyster sauce
1 small spoon Five spice powder
1 tsp White pepper
1 tsp Sugar
1 tbsp Chicken essence (may not be added)
Green onion, ginger and garlic moderate amount
Marinated rice seasoning:
10 tablespoons of soy sauce
2 tbsp Old soy sauce
2 tsp Salt
2 tsp Sugar
How to make Zongzi
1. Wash the meat, cut it into large pieces, add all the marinade seasoning, garlic can add more.
2. Cover with plastic wrap and marinate in the freezer overnight.
3. The next day, soak the glutinous rice for 2 hours, then drain the water, add all the seasonings and mix well to marinate for half an hour.
4. Next is to wrap the Zongzi, take two dumpling leaves (to prevent the Zongzi from blowing up during the cooking process) and fold up a little in the middle, then twist the leaves.
5. The bottom is like this …… (can prevent rice leakage)
6. Fill the bottom with a spoonful of glutinous rice, then put the meat.
7. Finally topped with two spoons of glutinous rice.
8. Thumb and middle finger to pinch in a little, pinch out a corner.
9. The other hand covers the other side of the leaf, and the thumb and middle finger of the left hand pinch the leaf.
10. Fold the extra leaves inward with your right hand.
11. Finally tied with a rope, electric pressure cooker pressure 30 minutes and then simmered for more than 2 hours before the pot.
12. Delicious Zongzi is ready!
