  • 1 teaspoon Sugar
  • 1 tablespoon Cooking wine
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Balsamic vinegar
  • 1 tablespoon Sesame oil
  • 2 tablespoons Chili oil
  • 4 pcs Ginger
  • 2 teaspoons Peppercorns
  • 1 pc Star anise
  • 3 pcs Bay leaves
  • 1 pc Red spicy
  • 1 teaspoon White sesame seeds
  • 1 tablespoon Garlic

Instructions
 

  • One big drumstick, you can also use small drumsticks.
  • Put the chicken thighs in cold water.
  • Then add 3 fragrant leaves, 1 star anise, about 20 peppercorns, 4 pieces of ginger, 1 spoon of cooking wine, and green onions.
  • Boil for about 15 minutes
  • If you like to eat more tender, cook for 15 minutes, and the chopsticks can easily pierce it.
  • After cutting, the bones inside are slightly bloody. If you are not used to it being too tender, you can cook it for a few more minutes.
  • Don't take it out after turning off the fire, soak it in the soup for a few minutes, take it out and soak it in pure water or ice water, the meat will shrink instantly, and the taste will be better.
  • Chop the chicken thighs into pieces, you can also tear the chicken into small pieces.
  • Slice the cucumber and place it under the plate.
  • If you don't like it, you can omit the side dishes.
  • Put the chicken on top of the cucumber
  • Dice the spicy millet and shallots, mince the ginger and garlic.
  • Put the spicy millet, minced ginger, minced garlic and chili powder into a bowl.
  • (If you don't have chili powder, you can omit it, and you can also add chili oil later).
  • Heat the oil and pour it in.
  • Add soy sauce, sugar, salt, balsamic vinegar, oyster sauce, green pepper oil, and chili oil.
  • Add 3 tablespoons of the soup for the chicken thighs previously cooked.
  • I don't have sesame oil at home, so I added this green pepper sauce, which tastes great.
  • If you don't have sesame oil, you can also add green pepper oil or pepper oil.
  • Pour the prepared sauce over the chicken.
  • Sprinkle some shallots, coriander, white sesame seeds, and chopped peanuts.
