Three Cup Chicken is a traditional famous dish in China. And it is one of the representative cuisines of Taiwan.
What is three cup chicken and why is it called three cup chicken?
Three cup chicken is usually made with three yellow chickens, oil and rice wine. The chicken meat is rich in flavor, sweet, salty, fresh, soft and chewy.
In the late Southern Song Dynasty, the national hero Wen Tianxiang was captured by the enemy. Before being executed, a Jiangxi old lady visited him in prison. She used a chicken and three glasses of wine to make a dish as his last meal. Since then, people have used this dish to commemorate him. Later, a chef changed three glasses of wine to a glass of rice wine, a glass of soy sauce and a glass of oil to make the world-famous three glasses of chicken.
Three Cup Chicken recipe
You’ll need:
10g black sesame oil
100ml rice wine
10 chicken wings
30ml light soy sauce
20ml dark soy sauce
20g sugar
Green onion
Ginger
Garlic
1 Chili
Basil leaves
How to make three cup chicken
1. Cut chicken wings into pieces, put in a wok with clear water. Cook it and drain it. Transfer it on a bowl.
2. Chop the green onion, ginger, garlic and chili. Heat a wok with black sesame oil, and stir-fry green onion, ginger, garlic and chili until fragrant. Add the chicken wings, soy sauce and rice wine in the wok.
3. Heat them under high heat until boiling, turn the fire down. Add the rock sugar and cover the lid, and continue to cook it under low heat for 10-15 minutes until the soup is halved. Turn the fire up, and cook it under high heat until the sauce has thickness.
4. Mix some basil leaves with chicken wings and transfer them on a plate. Serve.
