szechuan shrimp Recipe
Szechuan shrimp is a spicy stir-fry dish. Shrimp is rich in nutrients, and its flesh is soft and easy to digest. It is an excellent food for those who are weak and need to take care of themselves after illness.
Ingredients:
Shrimp | 300g |
Scallion | 1 |
Dried chilli | 30g |
Sichuan peppercorn | 1 teaspoon |
Starch | 2 teaspoons |
Balsamic vinegar | 3 teaspoons |
Soy sauce | 2 tablespoon |
White pepper | 1 teaspoon |
How to make szechuan shrimp
1. Open the back of the shrimp, remove the shrimp line, put it in a bowl, add salt, pepper, cooking wine and mix well.
2. The shrimp is coated with starch because it can be fried more crisply.
3. The oil temperature must be hot enough, and fry the shrimp until golden brown.
4. Sauce: sugar, soy sauce, water starch, vinegar (1:1:1:1.5) and mix thoroughly for later use.
5. Cut green onion into fish-eye segments, reserve cashew nuts (you can also use peanuts instead).
6. Take a spoonful of oil and cook until 8 mature, add dried chili, stir fry Chinese pepper, then pour in the adjusted sauce and heat it.
7. Put in the fried shrimp, coat with the sauce, add the fisheye green onion, drizzle some oil, a little cashew nuts, and stir fry quickly.
8. Come to a plate of authentic Bashu flavor.

- 3 teaspoons Balsamic vinegar
- 2 teaspoons Soy sauce
- 1 teaspoon White pepper
