Stir-Fried Chinese Mushrooms Recipe
Ingredients:
Fresh mushrooms | 300g |
Oyster sauce | 1 tablespoon |
Soy sauce | ⅔ tablespoons |
Starch | 1 teaspoon |
Sugar | ½ teaspoon |
Salt | ⅓ teaspoon |
Water | 1 tablespoon |
Plain flour (all-purpose) | 200g |
How to make Stir-Fried Chinese Mushrooms
1. Wash the shiitake mushrooms, remove the roots, blanch them in hot water for 30 seconds, remove them, and then rinse them with cold water.
2. Cut the white part of the back of the mushroom with a “well” flower knife, pick up the mushroom, fold it, and fix it with a toothpick.
3. Coat evenly with dry flour.
4. Heat the oil pan to 60% hot, put a wooden chopstick into the oil pan, observe if there are small bubbles rising around the chopsticks, if there is, it means that the oil temperature is 60% hot, then you can put the mushrooms in the oil pan .
5. Fry shiitake mushrooms until golden and crispy.
6. Add oyster sauce, soy sauce, starch, salt, sugar, water to the bowl in sequence, stir well, set aside.
7. Turn the pot on a low heat, pour in the prepared sauce, cook until the sauce thickens, pour in the fried shiitake mushrooms, and stir fry evenly.
