How to choosing fresh shrimp:
1. In shape: Fresh shrimp’s head and tail should be complete. These head and tail are closely connected to the body,and its body has a certain degree of curvature. Stale shrimps are the opposite.
2. Look at the color: Fresh shrimp shells are shine. The river shrimp is bluish green,prawns are bluish-white (female) or egg-yellow (male). And the Shrimp who is dark shelled, red or grey-purple is not fresh.
3. Look at fleshy: Fresh shrimps are firm and elastic when touched. Stale shrimps are the opposite.
4. Smell: Fresh shrimp has a normal smell. If it smells strange, it is the stale shrimp.
Salt and Pepper Shrimp Recipe:
You’ll need:
300g large shrimp
2/3 tablespoon cooking wine
4 cloves garlic
1 green and 1 red pepper
1 tablespoon starch
1/4 tablespoon black pepper
1/4 tablespoon white pepper
1/4 tablespoon Sichuan pepper
1/8 tablespoon salt
How to make Salt and Pepper Shrimp:
1. Use a toothpick to pick out the shrimp line, trim the shrimp of their feet, then mix with cooking wine in a bowl for 10 minutes.
2. Mix black pepper, white pepper and salt to in a bowl make pepper salt. Then, chop the garlic, spring onions, red pepper and green pepper and set aside.
3. Dry the shrimps thoroughly with paper towels and coat them with starch.
4. Heat oil in the wok to 375℉ and fry shrimps in batches,frying each side for 1-2 minutes.
5. Remove prawns and drain, leaving a little oil in the wok. Fried the garlic, scallion and peppers under high heat until aromatic.
6. Add the shrimp back to the wok, stir-fry with pepper salt for 1 minute. Transfer it on a plate and serve.
