Potato Stir Fry Recipe:
You’ll need:
2 potatoes
3 dried chilies, chopped
1 Green pepper, shredded
1 Red pepper, shredded
1 teaspoon Dried Sichuan pepper
2 medium cloves of garlic, minced
2 tablespoons ginger, finely minced
1 tablespoon coriander
1 tablespoon light soy sauce
1 tablespoon vinegar
1 teaspoon salt

How to make Potato Stir Fry:
1. Peel the potatoes and cut them into julienne strips.
2. Add the potatoes, 1 teaspoon salt and enough clear water in a bowl and soak it for 20 minutes. And then, drain it and set aside.
3. Heat a wok with oil, and stir-fry the Sichuan pepper and dried chilies until fragrant. Add garlic and ginger and stir-fry a few times.
4. Add the potatoes, green pepper and red pepper and stir-fry until the potatoes become soft. Add the salt, light soy sauce and vinegar in the wok and stir-fry it a few times.
5. Transfer it on a plate and sprinkle coriander. Serve.
