What is Ma La Chicken
Ma La Chicken is a famous dish in the east of Sichuan province. The dried chili is not the main ingredient, but more important than the main ingredient.
Ma La Chicken is popular not only because of its appealing taste but also because of its nutritional value.
Firstly, chicken is high in protein and low in fat. Besides, chicken protein is rich in all essential amino acids, which content is very similar to the eggs and milk, so it is a good source of protein.

Ma La Chicken Recipe:
You’ll need:
3 chicken legs
1 tablespoon of salt
1 teaspoon pepper
1 teaspoon cooking wine,
1 tablespoon of starch
1 small amount of oil
1 bowl dried chilies
1 small bowl of Sichuan peppercorns
8 slices ginger
20 cloves garlic
20 g peanuts
1 teaspoon white sesame seeds
1 tablespoon soy sauce
1 teaspoon Sichuan peppercorn oil
1 teaspoon Sesame oil
1 g sugar
1 g chicken essence
How to make Ma La Chicken?
1. Remove the bones of the chicken legs and cut the meat into small pieces.
2. Add 1 tablespoon of salt, 1 teaspoon of pepper, 1 teaspoon of cooking wine, 1 tablespoon of light soy sauce, 1 tablespoon of starch and chicken pieces in a bowl. Mix them well and marinate them for 20 minutes.
3. Prepare all ingredients in advance: 1 tablespoon of chicken essence, 1 tablespoon of white sugar, 1 teaspoon of peppercorn oil, 1 teaspoon of sesame oil.
4. Pour the oil into the pan, fry the marinated chicken for about a minute over medium heat. Transfer them on a plate. Then, heat up the oil to 200-240℃(392-464℉), and fry the chicken again for about 30 seconds.
5. Leave some oil in the pan, stir fry peppercorns and dried chilies for a few times.
6. Add ginger slices and garlic in the pan and stir-fry them until fragrant.
7. Add chicken cubes in the pan, stir-fry them for a few times. Seasoning with 1 tablespoon of chicken essence, 1 tablespoon of white sugar, 1 teaspoon of peppercorn oil, 1 teaspoon of sesame oil and two drops of soy sauce.
8. Transfer the fried chicken on a plate. Sprinkle sesame seeds and peanuts on the fried chicken. Serve.
