Hunan Pork Stir Fry is spicy and its meat is tender and richly fragrant. That is a good dish for serving with the wine, and it is also suitable for lunch.
What is Hunan Pork?
Hunan pork is a traditional dish of Hunan Province and belongs to Hunan cuisine. It is made from pork front leg meat, green pepper, garlic and so on.
The pork Hunan style is used the foreleg pork so that the fried meat pieces will be smooth and chewy. Add more oil or fat to increase the aroma. And the green peppers need to be sautéed for a while under high heat, so the scent would tempt enough.
Hunan pork vs. Szechuan pork
1. Hunan pork is spicy. It is a stir-fried dish that mixes a lot of vegetables with pork and starch.
Szechuan pork is also spicy. It often uses a lot of chili sauce to make the dish. And besides the spicy, it has a more sweet and sour taste than Hunan pork.
2. Hunan pork usually contains lots of fresh vegetables and other fresh ingredients.
Szechuan has a few vegetables and it always contains some dried, pickled and salt-cured ingredients.
Hunan Pork Recipe:
You’ll need
250g chili pepper
200g pork
10g cardamom
2 tablespoons ginger, finely minced
2 tablespoons garlic, finely minced
2 tablespoons soy sauce
1/2 teaspoon salt
1g MSG
1 tablespoon Starch
Vegetable oil
How to make Hunan Pork
1. Wash the peppers and cut into strips, wash them again and filter out the excess pepper seeds.
2. Cut the pork into strips. Add the pork strips, 1g white sugar, 1 tablespoon of soy sauce and 1 tablespoon of starch in a bowl. Mix it well and marinated it for a few minutes.
3. Heat a wok with oil, and stir-fry the pork until cooked. Add the 1 tablespoon of ginger, 1 tablespoon of garlic and 10g cardamom in the wok. And stir-fry it until fragrant.
4. Add the chili pepper, 1 tablespoon of soy sauce, 1/2 teaspoon of salt and 1g MSG in the wok and stir-fry quickly for a few times. Transfer it on a plate and serve.
