The history of Hong Kong-style milk tea
The habit of British drinking tea is from China, but the drinking method has its characteristics.
The British like to add sugar and milk or lemon slices to the tea. After being introduced to Hong Kong, the tea is called “Western Tea”, which is different from the traditional “Tang Tea”.
British milk tea is not popular in Hong Kong because of its light taste. So the tea restaurant owners have developed Hong Kong-style milk tea based on British milk tea.

Hong Kong-style milk tea tastes sweet after bitterness, and finally, it is full of fragrance. The tea is rich in flavor; the milk is kept for a long time and has a creamy taste.
What kind of tea should I use for Hong Kong milk tea?
The black tea used in Hong Kong-style milk tea is Ceylon black tea imported from Sri Lanka. Thanks to Sri Lanka’s unique rain and abundant tropical climate, the black tea produced here is rich in flavor.
Hong Kong Milk Tea Recipe:
You’ll need:
30g Ceylon black tea
Boiled water
1 cup evaporated milk (250ml)
80g sugar
How to make Hong Kong Milk Tea:
1. Pour Ceylon black tea leaves into a muslin bag and place it over a cup. And pour 500ml boiled water into the cup through the muslin bag. Pour off the tea from the cup.
2. And pour another 500ml boiled water into the cup through the muslin bag again. Take away muslin bag and transfer the tea into the teapot. Pour 1 cup of tea in a clear teacup.
3. Add 1 cup of evaporated milk in the teacup. And add sugar or other ingredients in the tea according to your preference. Serve.
