My favorite fresh egg noodles when I was a kid.
When I was a kid, I was taken to the noodle workshop by my mother to work on weekends. When the noodles were ready, they had to be hung up on a long, thin pole to dry, and some of them would secretly fall down.
I’m from the south, and once in a while, when I had fresh noodles, I thought they were really a delicious food, especially with the addition of eggs, which had a special fragrant flavor. (Because we always ate sun-dried hanged noodles.)
Later, when I grew up and came to the north, I learned that fresh noodles are hand-rolled noodles. And whenever you want to eat, you can do it anytime. You can also freeze it in the refrigerator if you can’t finish it.

Homemade egg noodles Recipe
Ingredients:
Flour | 200 g |
Egg | 42 g |
Water | 38 g |
The total weight of eggs and water is controlled at 80 Grams | |
Corn starch | 200g |
Tips & Variations
1. If the amount of water and egg mixture is 80 grams, the dough will be dry, but it can be formed into a dough after rising.
2. You can use an electric dough press to press the dough directly without letting it rise.
3. The dough will be very al dente after a few more pressings.
4. The corn starch sprinkled, cooked and eaten will be very stalky.
How to make Homemade egg noodles
1. Eggs
2. Mix the ingredients, barely into a dough. Put in a plastic bag to relax for an hour. Knead a few more times during this period.
3. Repeatedly press the dough with a dough press, and finally pressed to the desired thickness. If it sticks to your hands, reduce the amount of water next time.
Here you can also sprinkle cornstarch to prevent sticking.
4. Finally cut the dough.
5. Roll up.
6. Not sticky egg noodles, there is a smell of eggs, not fishy.
7. If you can’t finish it, freeze it in portions.
