What is Hainanese chicken?
Hainanese chicken is the most famous traditional dish in Hainan province, China. And it is also a “Chinese Famous Dish” selected by the Chinese Culinary Association.
Hainanese chicken is smooth and tender, with thin skin and crispy bones. It has a strong aroma and is not fatty. The cooking method of Hainanese chicken is not much different from that of white-cut chicken, except that there are more natural spices. (Mainly composed of ginger, garlic, sugar, refined salt, and fresh orange juice or lemon juice. )

Hainanese chicken rice is mainly made from local white-cut chicken in Wenchang city, Hainan province. It is also cooked with chicken oil and chicken broth, so it is named Hainan chicken rice.
Hainanese chicken rice recipe
You’ll need:
For Hainanese chicken
1 young chicken
Ginger, sliced
1 tablespoon cooking wine
1 pinch salt
2 shallots
8 slices ginger
5 blocks garlic
2 pandan leaves
1 lemongrass
Sesame oil
For Hainanese chicken rice
200g jasmine rice
2 pieces of chicken oil (30 g)
3 ginger slices
1 tablespoon minced garlic
1 shallot
For Hainanese chicken rice chili sauce
50g black soy sauce
30g chicken broth
30 g rock sugar
5 red chili
1 tablespoon yellow pepper sauce (optional)
1 tablespoon ground ginger
1 tablespoon minced garlic
2 tablespoons lemon juice
2 tablespoons apple cider vinegar
2 tablespoons sugar
How to make Hainanese chicken
1. Dispose of the chicken cleanly, transfer the chicken oil in a bowl. Rub the chicken skin and the inside repeatedly with salt, knead once with ginger and cooking wine, and set aside for 30 minutes.
Put the shallots, ginger slices, pandan leaves and garlic in the chicken belly, and use the toothpick to close the chicken belly tightly. Heat a wok with water, and cook the ginger, lemongrass and salt until boiling.
2. Add the chicken in the wok for 30 seconds, transfer it on a plate. Continue to heat the wok until boiling, add the chicken in the wok again. Repeat the previous step 3 ~ 5 times. Then, cover the lid and cook the chicken for 30 minutes. Pour chicken broth through a filter in a large bowl and set aside.
How to make Hainanese chicken rice
Soak the rice for 30 minutes in advance and then dry it. Heat a wok with chicken oil, and stir-fry ginger, garlic and shallots until fragrant. Add rice and continue to stir-fry until fragrant. Then, pour the chicken broth and continue to cook it.
How to make Hainanese chicken rice chilli sauce
1. Mashed chili, garlic, ginger, and shallots in a bowl. Season with lemon juice, salt, sugar and apple cider vinegar. 2. Heat a wok with chicken broth, and cook the rock sugar until melt. Add the dark soy sauce and cook until boiling. Then let it cool and transfer them in a dish.
Finally, cut the chicken into pieces. Serve it with rice and chili sauce.
