Preparation Steps:

- Add carrot and bell pepper, and cook until slightly softened.

- Push the shrimp to one side, pour the beaten eggs into the other side of the pan, and scramble until cooked.

- Cook for another 2-3 minutes or until the noodles are heated through. Adjust seasoning if necessary.
- Serve hot, garnished with chopped spring onions.
