What is dan dan noodles
Dandan noodles are a kind of pasta snack with Sichuan flavor. In the early days, dan dan noodles were sold by hawkers, so hence the name.
The smooth noodles are served with dried sambal seeds fried with vegetables and minced meat, and served with several seasonings. The complexion is bright red, salty and slightly spicy, and the aroma is fragrant. It can be called the leader in Sichuan-style pasta.

How to make dan dan noodles
1. Cut the plum meat into minced meat, wash the sprouts and cut them finely.
2. Heat the oil in a pot, when the oil is 50% hot, add the minced meat and stir-fry until fragrant, add star anise to enhance the fragrance, until the minced meat is dry and stir-fry with chopped sprouts.
3. Boil water, scald noodles and vegetables.
4. To adjust the noodle sauce, add soy sauce, balsamic vinegar, salt, pepper noodles, sesame sauce, broth, and red oil to the bowl.
5. Pick up the noodles and vegetables, add the fried sauerkraut, chopped peanuts, and chopped green onion.

Instructions
