2. How to make cold lotus root
1. Prepare the ingredients needed to make the spiced hot and sour vinegar (all-purpose sauce);

2. Put fish sauce, sugar, water, chopped chili and orange peel into a small pot and boil and let cool for later use;
3. Mix the cold fish sauce mixture with five-spice powder and Zhenjiang vinegar. Put it in a clean glass bottle and keep it in the refrigerator for 2 weeks.
4. After washing the lotus root, slice it for later use;
5. Boil a pot of boiling water in a deep pot, add lotus root slices, cook for 1-2 minutes, immediately turn off the heat to remove and drain, soak in ice water for about 10 minutes; then pick up and drain for later use;
6. Put lotus root slices in the prepared dish, drizzle with sauce, sprinkle with sesame seeds and chopped green onion.
