Chinese Scallion Pancakes are a type of pancake from China. They are also known as “Pancake Egg”. The name comes from the shape of the pancake, which resembles an egg. This dish is usually served during the Spring Festival (Chinese New Year).
This dish originated in the southern part of China. It was originally called “Egg Pancake”, but later changed its name to “Scallion Pancake”. In America, they are often served at restaurants during the Chinese New Year.
There are two types of Chinese Scallion Pancakes: Sweet and savory. Sweet ones are made with eggs, flour, sugar, milk, and scallions. Savory ones are made with eggs and flour. Both types are cooked in hot oil or butter.

Ingredients:
Flour | 400 grams |
Cold water | 280 grams |
Onion, oil, salt | Moderate |
How to make chinese scallion pancakes
1. Knead the flour and water into a smooth dough, cover with plastic wrap and let it rest for more than 4 hours.
2. Extra chopped green onion.
3. Wake up and take out the dough without kneading, divide it into 8 parts directly.
4. Roll out into a large sheet, brush with a layer of oil, sprinkle with a little salt to taste, then cover with chopped green onion, roll up, pull and twist, roll up from one side to the other, press the tail down, and wake up for 5 minutes.
5. Roll into round cake.
6. Brush a little oil on the pan , put the cake in and brush the top with oil, fry the bottom until golden brown and then turn over.
7. Fry both sides until golden brown.
8. Crispy on the outside and soft on the inside.
