It’s very easy to make and you don’t need any special equipment.
Lately, I love fried noodles. I can always remember when I was in college, before I went back to my dorm room from the library at night, I went to eat a bowl of hot and fragrant fried noodles. As if love fills my stomach and warms me up, I can sleep more soundly.
I went to the supermarket over the weekend and brought back a lot of seafood, so I’ll make a richly colored stir fry. The addition of small rice pepper will bring some spicy flavor, seasoned with oyster sauce and soy sauce together with old soy sauce for color. The whole plate of fried noodles are more appetizing! Remember the cilantro.
What is Cantonese Chow Mein
Chow mein is a type of noodle dish from China. It consists of rice noodles served with meat or vegetables. The name comes from the Cantonese word for “noodle”.
The first recorded recipe was written by an ancient Chinese cook called Li Ching-Yen in his book, The Classic Cuisine of Ancient and Modern Chinas. He wrote that this dish was originally made with wheat flour but later on he changed to using rice flour.
This dish has been popularized by the American chef Julia Child who included it as one of her favorite dishes during her famous cooking show. She also added her own twist to the original recipe by adding some fried egg.
Today, there are many different variations of this dish. You can find them all over the world including Hong Kong, Singapore, Malaysia, Thailand, Japan, Korea, Taiwan, Vietnam, Indonesia, Philippines, etc.
Cantonese Chow Mein Recipe
Ingredients:

Cabbage | half |
Carrot | half root |
Onion | half |
Fresh shrimp | 10 |
Squid ring | 10 |
Cuttlefish flower | 10 |
Egg | 2 |
Shallots | a handful |
Ginger slices | 5 pieces |
Millet pepper | 5 |
Garlic | 5 petals |
White sesame | Moderate |
Soy sauce | 3 tablespoons |
Old soy sauce | 3 tablespoons |
Oyster sauce | 1 tablespoon |
Salt | Moderate |
Edible oil | Moderate |
Coriander | a handful |
How to make Cantonese Chow Mein
1. Prepare all the ingredients, mince coriander, shallot, garlic, shred onion, carrot and cabbage, and cut millet pepper into rings. Remove the head of the fresh shrimp, peel the shell, and save the shrimp for later use.
2. After the noodles are cooked for 7 minutes, they can be taken out of the ice water for use. Do not cook them, otherwise the taste will be too mushy after frying.
3. Put some oil in the pot, a little more oil, wait for the fried noodles to absorb more oil. When the oil is hot, add onion ginger garlic onion millet pepper and other ingredients to fry until fragrant.
4. Then add the shredded cabbage and fry until almost broken.
5. Add the seafood ingredients and fry until they are basically broken, then add the drained noodles, pour in the light soy sauce oyster sauce and salt to taste.
6. Then sprinkle with white sesame seeds and coriander, cover with a sun egg and you’re ready to go, come and try it.
