Cantonese chicken is one of the Cantonese cuisines. It has been popular since a folk hotel in the Qing Dynasty.
What is Chinese poached chicken?
Chinese poached chicken is usually made of fine-bone farm chicken, ginger, garlic and other ingredients. After slow-boiled, dry and cut into pieces to serve with dipping sauce. Chinese poached chicken is cooked but not rotten, the skin and meat are tender and smooth, the original taste is light and delicious.
Cantonese chicken recipe
You’ll need:
1 chicken
4-5 slices ginger
1 green onion
2 tablespoons cooking wine
For seasoning
4-5 cloves garlic
1 small piece ginger
1 green onion
1 pinch salt
3 tablespoons vegetable oil
How to make Cantonese chicken
1. Wash and drain the chicken. Heat a pot with water, and add ginger slices, green onion and 2 tablespoons of cooking wine. And continue to cook it until boiling.
2. Slowly put the chicken in the pot and blanch for 20-30 seconds, then lift it out. Repeatedly placing the chicken 3 times in boiling water until the chicken skin becomes smooth.
3. Put the chicken in the pot, cover the lid and cook it until boiling. Continue to cook for 3-5 minutes. Turn off the fire, and set aside for 30 minutes.
4. Transfer the chicken in cold water until cool and cut the chicken into small pieces. Add garlic, ginger, green onion and salt in a bowl, heat some oil and pour into the bowl to make a dipping sauce. Serve the chicken with dipping sauce.
