What is Almond Tofu
Almond tofu is a traditional specialty in Jiangsu Province, China. This dish is included in the Manchu and Han banquets. It is mainly made of sweet almonds, boiled with water, frozen and coagulated, and then cut into pieces. It is named after its shape like tofu. However, due to the different regions of production, the method of making almond tofu is also somewhat different.
Almond Tofu Recipe
Ingredients:
Almond | 120 g |
Milk | 500 g |
Water | 800 ml |
Sugar | 3 tablespoons |
Agar powder | 6 g |
Sugar osmanthus | 2 tablespoons |
Tips & Variations
When the agar is melted, rock sugar is added. Pay attention to adding according to your own taste, because at the end you also need to add rock sugar water and sugar osmanthus. in case it’s too sweet or too bland.
How to make Almond Tofu
1. Soak almonds in warm water for about half an hour. Then peeled.
2. Add 400 ml of water to almonds and put them into a soymilk machine . After beating, separate the residue and take apricot juice for later use.
3. Add 6 grams of agar powder. Add 400ml of boiling water and mix well.
4. Add an appropriate amount of rock sugar and melt on low heat.
5. After the rock sugar has dissolved, add apricot juice and milk, and mix well.
6. Pour it into a bowl, let it cool, and put it in the freezer for about 2 hours. It forms into a pudding shape and you can eat it.
7. Dissolve rock sugar in water.
8. Before eating, add sugar osmanthus and rock sugar water .

I made this and I gotta say, it’s amazing! So quick and easy to make and it’s the perfect snack for warm days, very refreshing! I also tried it with honey and nuts which was very nice (just make sure to not overdo it with the honey cause it’s already pretty sweet on its own) and it also went well along with some chopped up strawberries! Honestly, I’ll be making this all the time in summer, very light, airy and cool~!
